Restaurant Julius Carlsson i Borl\u00e4nge har p\u00e5 bara n\u00e5gra m\u00e5nader f\u00f6rdubblat snittantalet luncher fr\u00e5n 150 till 300. Nu avsl\u00f6jar \u00e4garduon Peter Zaar-Marcus och G\u00f6rgen Tid\u00e9n hur nytillskottet i kassan ska investeras i verksamheten.<\/strong>
\n\u2013 Vi \u00e4lskar att jobba mot det lokala k\u00f6ket och nu tar vi ytterligare ett steg, s\u00e4ger G\u00f6rgen.<\/strong><\/p>\n

I slutet av november invigdes Restaurant Julius Carlsson i Borl\u00e4nge, i samma lokaler d\u00e4r Restaurang Teknikdalen tidigare huserat. Med nytt namn, utseende och koncept hade \u00e4garna Peter Zaar-Marcus och G\u00f6rgen Tid\u00e9n som m\u00e5l att jobba upp luncherna fr\u00e5n i snitt 150 till 300 om dagen innan sommaren. Men strax f\u00f6re julledigheten stod det klart att man n\u00e5tt det m\u00e5let \u2013 betydligt tidigare \u00e4n s\u00e5.<\/p>\n

\u2013 Det \u00e4r otroligt roligt samtidigt som att det \u00e4r ett kvitto p\u00e5 att vi \u00e4r p\u00e5 r\u00e4tt v\u00e4g, s\u00e4ger Peter Zaar-Marcus.<\/p>\n

\u00d6kningen har redan f\u00e5tt flera positiva effekter f\u00f6r verksamheten.<\/p>\n

\u2013 Vi har bland annat kunna forts\u00e4tta att vidareutveckla den vegetariska satsningen \u2013 som vi arbetat mycket h\u00e5rt med den h\u00e4r tiden, sen har vi \u00e4ven haft r\u00e5d med nyanst\u00e4llningar. Extra kul \u00e4r att den h\u00e4r f\u00f6rdubblingen inneb\u00e4r att vi kan arbeta med \u00e4nnu st\u00f6rre m\u00e4ngd lokala r\u00e5varor \u00e4n tidigare, vilket i sin tur kommer att resultera i att v\u00e5r mat kvalitetsm\u00e4ssigt tar ytterligare ett steg upp.<\/p>\n

Restaurangen kommer i b\u00f6rjan av n\u00e4sta vecka \u00e4ven att lansera en satsning f\u00f6r att minska matsvinnet.<\/p>\n

\u2013 Vi vill vara med och p\u00e5verka v\u00e5rt klimat p\u00e5 alla s\u00e4tt vi kan, d\u00e4rf\u00f6r kommer vi fr\u00e5n och med nu att b\u00f6rja v\u00e4ga all mat som sl\u00e4ngs och presentera den siffran i restaurangen p\u00e5 regelbunden basis, s\u00e4ger G\u00f6rgen Tid\u00e9n.<\/p>\n

St\u00f6rre delen av den plast som anv\u00e4nds i verksamheten kommer \u00e4ven att fasas ut.<\/p>\n

\u2013 Det h\u00e4r g\u00e4ller allt fr\u00e5n mat- och salladsl\u00e5dor till att b\u00f6rja anv\u00e4nda milj\u00f6v\u00e4nliga servetter som g\u00e5r att sl\u00e4nga i komposten.
